“Who could have imagined that good “spinach”, which the locals refer to as “višče” (foliage) could have been made from turnip shoots? And what of zelševka – a variation of the ubiquitous potica cake from the town of Idrija – made from chives, onion shoots, young yarrow, mint and tarragon. A similar dish, but even more diverse in its ingredients, is prepared in the Brda district for Easter – all sorts of “weeds” are collected to prepare this herbal pie.” (p115)
